"Ollmhór" 250/72mm fulltall gyuto
This is a benchmark gyuto for me in terms of forging thin and setting up the lower bevel to be absolutely sweet. With super fine edge geometry, it cuts like a beast with its tall height down the full blade length. Even though it's relatively light for its length, it has a nice cutting assist feel because of the extra height adding forward weight. The spine and choil have been mirror-polished before temper softening the tang joint and are extra comfy. The front section is also walkschliffed to help with extra tall produce. Enjoy!
