"Maeve" 240/63mm integral choil gyuto
This knife is the culmination of a lot of R&D forging. For me, it's an extremely satisfying balance of bringing practical ergonomic and performance tweaks into an package with a ton of artistic possibility. Let's talk about the 'integral choil...' It's really damn big and comfortable and is mirror polished for your non-blistering pleasure. It also allows the handle to be approx 15mm shorter as the choil itself is comfortable as 'part of the handle' but is also the where you rest your finger in the pinch. This improves the balance and overall nimble feeling of the knife even though there is more steel mass than the usual hidden-tang construction. With it's 2/3 top tang and very quick forged taper, this blade is super light considering the real-estate around the gripping point. It balances just forward of the choil and handles like a laser. It has a super fine convex geometry and a super fine tip. Ready to rock all day without a pause.
